The Wandsbek Botanical Garden in Hamburg carried out its annual classification of the most dangerous plants and it was surprising to find in the list at parsley. However, eating the leaves is not risky.
According to experts from the German Botanical Garden consume the leaves of parsley it is not dangerous and it is even good for health because it contains a lot of vitamin C. The problem lies in the flowers that form during the second year of life of the plant.
Seeds appear in flowers for reproduction and they are rich in apiol, an organic compound that causes muscle contractions. That is why they should not be consumed and it is also necessary to be careful with the parsley essential oil that can be toxic if it includes part of these seeds.
Parsley is an extraordinary source of vitamin C, which strengthens the immune system, vitamin K, essential for blood clotting, and iron. For this reason, its leaves can be consumed in the quantity desired.
Another issue occurs with the seeds since apiol affects the smooth muscle fibers of the bladder, intestines and uterus and can even be abortifacient. In the case of accidentally consuming seeds, if you begin to notice symptoms of poisoning, such as cramps, you must seek medical attention immediately.
